our story

My passion for cooking was first realized while cooking for the homeless, under the bridges of Pittsburgh, Pa. To see the impact that food had on people, really changed my thinking. Our food was a gateway into their homeless camps and found that it also softened their hearts. After all, we were their to show the love of Christ and lead them to the Lord. It was the food and water that helped make that possible.

 

Soon after I began to go on mission trips and cooking for the poor, oppressed, orphans and widows. I found that no matter what language they speak, you can always recognize love. The smiles and hugs I have received over the years, for just simply offering food is amazing.

 

So that is where the passion comes from, feeding people, and changing lives. Yes, I said changing lives. Beside I have always been a foodie, passionate about food. Now my passion involves not just eating great food, but now making it for others to enjoy. I get no greater thrill, than to hear someone tell me how good their meal was. It truly is a blessing for me. That just motivates me more to do better and bring better meals with more diversification to our region.

 

Now my first real experience with someone who knows smokers and smoking meats came at my neighbors house Rocky Pedaline. He got me interested so much, that he sent me home with his stick burner to play with. He is a perfectionist and full of wisdom. I was fortunate enough to have him as my smoker mentor. He taught me much and I couldn't thank him enough. I would take him down samples of my food looking for critiques and he would never hold back the truth. I knew if Rock liked it, people would buy it.

 

Soon after I bought my first smoker. I smoked turkeys that first holiday and most of my customers were family. I must admit they weren't that good. I thought they were, but what I know now they weren't. I now brine all my turkeys. I put a dry rub on for a few days. I don't use the same kind of wood, nor as much. I don't guess, I use a thermometer to know exactly when their done. Let them rest before carving. Bottom line, I have learned so much in such a short time. I am always asking, how can it have been better? I strive for complete satisfaction and take tremendous pride, in customer  satisfaction. That is one of the reasons for our success, we really do care!

 

Now let me talk about my better half for a while. My beautiful wife Carol has always supported me. She is .a blessing from the Lord, and we fell in love while feeding the homeless under the bridges of Pittsburgh. We met in church and stilll serve in church on a regular basis together. She works very hard during the week at her job of twenty plus years. Then comes home, and has to deal with all the messes I have made during the day. She not only cleans up after me (full time job just ask her) but keeps the house clean and in order.

 

Then she is responsible for making all the smoked mac and 7 cheese plus all the potato salad. She helps out more when we have bigger jobs and need to travel and setup. So let me just say baby I love you and couldn't do it without you. You mean everything to me!

 

I want to thank my family and my friend Terry Leopardi for all your continued support through the years. I am a blessed person, so many awesome people in my life. Most of all, I thank my Lord and Savior Jesus Christ for His Love, Grace and Mercy...

Born in New Brighton in 1965 and raised in Bridgewater PA. Graduated from Beaver Area High School in 1983 and Pennsylvania Technical institute with an associates degree in

electronics.

 

Lived in Detroit for 4 years fixing main frame computers and big industrial plotters. Returning back to western Pennsylvania in the late 80's to run a family vending business and DJ'ing six nights a week.

 

I then decided to join the Marines Reserves and became a Military Policeman. After all law enforcement runs in the family, still today. In 1990 I opened Rochester TV & Radio, an electronic repair center.

 

Today many years later I still repair electronics, but not on the scale as I once did. When the restaurant opens in 2018, I will close my doors finally to pursue another life time dream.

 

Speaking of passions, I must admit I love competition on any level. As a youngster I was involved in martial arts, hockey, baseball, football and even started a group of neighborhood friends called "Pollution fighters'' We used to go around Bridgewater and pick up trash. We would compete and see who could gather up the most.

 

Today's passions include serving the Lord and being a blessing to others. It's my passionate cooking that has been the means behind the blessings of others.

 

I have a heart for the homeless and less fortunate. I enjoy spending time with family, golfing and traveling.  I have a dog named Palmer , after Arnold of course.

 

 

 

My name is Carol and I am married to Jeff, aka Big Smoke.

 

I have been working at the same place for over twenty five years. I care for adults with developmental disabilities and dementia.

 

I have a passion for the less fortunate and homeless. My husband and I enjoy spending time together and with family. I have two beautiful daughters and a grandson, Andrew.

 

I don't eat meat, if you can believe that married to Big Smoke. But he cooks me the best seafood I've ever had. His smoked Scottish Salmon is my favorite.

 

We attended and serve together in our local church. I am so thankful for what God has done in my life and that He is in control.

Bruster's hired Eric as a District Manager where he relocated to Atlanta, Georgia to help grow the franchise and help franchisees improve profitability. During his time at Bruster's Eric opened over 70 Bruster's franchise units across the Eastern US
